• Apply business concepts to the management of culinary enterprises.
• Learn how memorable food service enhances consumer experience.

This course develops culinary students’ skills to degree standard. You will learn advanced culinary techniques, both contemporary and traditional, develop your skills in advanced pastry and learn how to develop a new food product. This year will introduce you to the main functions of business and provide you with firm foundations of culinary management.
Core units in this year include:
Semester 1: Hospitality Marketing, Talent Acquisition and Development, Tourism Management, Environmental Management and Resource Efficiency, Advanced Pastry Art and Design, Culinary Innovation and Botanical Cuisine.
Semester 2: Applied Culinary Nutrition, Food Product Development, Advanced Culinary Techniques in Fermentation and Preservation, Digital Transformation in Service Businesses, Ethic and Values in Hospitality and Tourism Management, Advanced Pastry Innovation and Commercialisation. In addition, students are supported by a Course Co-Ordinator.
