Course Description:
This course will include a wide range of basic baking techniques and recipes. These will range from basic sponges to a finished celebration cake by the end of the course. Each week you will be provided with an ingredient list for the following week's class.
Course Content:
Week 1: Introduction, get to know the class and ask them is there anything they'd like to try make. Do a demo of bread making, sponge making and filling for sponge.
Week 2: Making crumbles (classes choice of fruit fillings) , sweet pastry, basic tart.
Week 3: Bread making. Yeast bread (flavour decided by class) flat bread and soda bread.
Week 4: Sponges. Classic victoria sponge, sponge for Swiss roll, cupcakes.
Week 5: Fillings for cakes. Basic jam, different types of buttercreams for cupcakes and cakes, ganache’s.
Week 6: Choux pastry and meringue. Éclairs and choux buns, and basic meringue nests.
Week 7: Cake making. Make sponges and fillings for cake of choice. Cheesecake making.
Week 8: Assembling cake. Different ways to decorate cake, different garnishes to decorate cake and different piping techniques.
Emma Crimmins has been working as a professional pastry chef for over 10 years. She studied professional cookery at Crumlin college and also attended a pastry masterclass in the renowned Valhrona school of pastry in France with some of the world's top pastry chefs. Her experience ranges from some of the top hotels in Ireland including The Marker hotel, The Intercontinental and The K Club where she ran the pastry kitchen for over four years.
